The Big Day








I am running a day behind in posting but just too much to do trying to get all the recipes ready for today. So my Monday was the usual run around like a chicken with my head cut off trying to plan for the week and see what is in the freezer meat wise for dinner. I found some pork steaks??, a grass fed sirloin steak, and some ground beef - so I am still thinking on these things as to what to do with them, I will keep you posted.

Breakfast was my usual breakfast scramble.
Lunch I wasn't sure but I was preparing dinner and it looked soooo good that I ended up having it for lunch. And it was:

Dinner - "Stuffed Squash"
Ingredients:
1 or 2 of your favorite squash (butternut, delicata, acorn etc)
2-4 sausages (preferably organic gluten free but in a pinch I use spolumbos, whatever kind you like)
1/2 cup onion
1/2 cup asparagus
1/2 cup mushrooms
1 cup spinach/swiss chard/or any dark green leafy veggie

Directions: preheat oven to 350
1. Cut squash in half and scrape out seeds and stringy stuff (save the seeds if you like, I LOVE roasted pumkin or squash seeds so I always save mine, it makes an amazing healthy snack - i will post that recipe as well)
2. Melt some coconut oil on stove then brush squash with it
3. Season squash with salt, and pepper, or cinnamon if you like
4. Place squash face down in baking dish in 1/4 inch of water
5. Bake at 350 for about 25 -35 minutes just check and make sure they are "soft" but not squishy

Sausage:
1. Squish the inside of the sausage out of the casing into a pan and start cooking
2. Add onions and asparagus and continue to saute for 2-3 minutes
3. Add mushrooms saute for another 2 minutes
4. Add greens when the sausage is done and just wilt it

Scoop the sausage yumminess into your bowl - the squash and eat - wow was this good!! I liked it best with the delicata because it had a sweeter flavour than the acorn, mixed with the spicyness of the sausage it was amazing.

Workout: Snatches (ha ha funny word) but basically involves lifting a barbell to above head in one movement, very technically difficult. 30 Handstand pushups. 20 reps x 6 sets of back extensions concentrating on using my "butt" instead of lower back muscles. Ouch those burned!!

Snack : Roasted Squash Seeds
1. Take your seeds rinse then in a colinder until all the stringy stuff is removed
2. Place in a bowl, melt some coconut oil and pour into bowl mix around
3. Season them with whatever you like - I used sea salt and organic brown sugar (I know - no sugar but just a small amount and so absolutely yummy I couldn't resist). But best just to stick with spices like cajun or whatever. Spinkle in the bowl mix around
4. Spread them out on a cookie sheet and place in oven for about 10 minutes. Keep a close eye on them as they can burn easily. Stir them around on the sheet maybe after 5 minutes.
5. Enjoy

These were seriously to die for but dangerous because I ate the whole damn bowl just couldn't stop myself.
